The inert gas in the bag is there to prevent them from going stale and to inflate the bag to act as a cushion during shipping & while on the shelf, otherwise the chips would get crushed and all you would have is a bag of crumbs.
I don't remember from the episode of Unwrapped on Food Newtwork, but they went into the Lays factory to show how the process goes from a truck of potato's being dumped into a storage bin and goes through the whole process. Pretty interesting, now I can see why they are expensive in some parts of the US.
Canada is fun place for chips. On a trip to Kingston, ON I stopped to gas up & get munchies. I tried the Dill favored chips (pretty good) and white cheddar were not bad and the ketchup (not bbq) ones were just nasty.
If I recall, it's Nitrogen.....

Small ones run a tad more than a buck, the double bag goes for $2.99, the single bag runs $1.99. All prices are approximate. Note: the single bag of Mike Sells is the same size as a large Doritos bag.
Also note: long ago I took a tour of the Mike Sells factory, this was waaay back in the late 1970's. Got free chips, so it wasn't too bad.
