The inert gas in the bag is there to prevent them from going stale and to inflate the bag to act as a cushion during shipping & while on the shelf, otherwise the chips would get crushed and all you would have is a bag of crumbs.
I don't remember from the episode of Unwrapped on Food Newtwork, but they went into the Lays factory to show how the process goes from a truck of potato's being dumped into a storage bin and goes through the whole process. Pretty interesting, now I can see why they are expensive in some parts of the US.

Canada is fun place for chips. On a trip to Kingston, ON I stopped to gas up & get munchies. I tried the Dill favored chips (pretty good) and white cheddar were not bad and the ketchup (not bbq) ones were just nasty.

If I recall, it's Nitrogen.....

It is and I remember seeing that episode of unwrapped also.

BTW Tony, how much is a bag of Mike-sells going for nowadays?

Small ones run a tad more than a buck, the double bag goes for $2.99, the single bag runs $1.99. All prices are approximate. Note: the single bag of Mike Sells is the same size as a large Doritos bag.

Also note: long ago I took a tour of the Mike Sells factory, this was waaay back in the late 1970's. Got free chips, so it wasn't too bad.
Tony, I did the factory tour also waaaay back when on a field trip for school,4th grade maybe? I'll never forget eating a few of the hpt chips right outta the fryer and on the belt. OH MAN, I thought those things were absolutely the best thing i'd ever put in my mouth up to that point. I remember it pretty vividly still.

J, you can order them off of the web: web site

I like the groovy chips (chips with ridges, for the Mike Sells impaired)

They are even on facebook.

They're on Facebook? Wow!

Think of PA when you're talking chips.
Bickel's, Herr's, Snyder's of Hanover(not affiliated with Snyder's of Berlin), Martin's, Charles Chips, Gibble's, Middlewarth's, Wise, Troyer Farms, Utz's, Snyder's of Berlin(not associated with Snyder's of Hanover), etc., etc.,...... I've had all of these and more.

PA potato chips

Edited: Back to the original question. Every week here they'll be at least one company having large bags on sale for 2/$4 or at worst 2/$5.

Even when you buy a large bag, 90% of it seems to be air.
It always seems they could fit the same amount of actual chips into a much smaller bag.

Tim

The air in those bags is intentional

........... otherwise they would have to re-print all of their bags to say "Potato Crumbs".

I work in a school kitchen and the chips we get for nachos come in a bag that's about the same size as a Costco size bag of Doritos but the bag is packed full and there are very few broken chips. I think there's a group of assholes out there that just walks around stores crushing the chip bags. You always have to pull from the back or the top if you don't want crushed chips at the stores around here.

That certain "group" might possibly be the Chip-Guys,
who are just trying to squeeze in a couple of extra bags on the shelf ???
